I'm excited to invite you to Bean to Bar: The Journey of Chocolate, an engaging evening presentation where I'll walk you through the full chocolate-making process and share what goes into crafting small-batch, artisan chocolate at Wright Old School Chocolate.

This class is presented in a lecture format, making it a relaxed and informative way to learn about chocolate — with plenty of opportunity for questions along the way.

Where cacao comes from and how it's sourced
The key steps in transforming raw beans into chocolate

Introducing Milk Chocolate — Crafted the Wright Way

Dear Chocolate Enthusiast,

Many have been asking whether I would ever make milk chocolate. After careful development—and I must admit, a bit of reluctance to part from my dark chocolate roots—I'm proud to introduce Wright Old School Milk Chocolate, crafted with the same focus on simplicity and quality as my original dark chocolate.

What sets them apart (Dark vs. Milk Chocolate)?

Both my Dark and Milk Chocolate begin with the same foundational ingredients:

Cocoa nibs
Unrefined sugar

The Dark Chocolate contains only these two—minimal and direct; totally allergen-free and vegan friendly.

To create the Milk Chocolate, I add:

Cocoa butter
Coconut powdered milk

These four ingredients result in a smooth, creamy texture, while preserving the integrity of real cacao flavor.

A quick note for those with allergies: The inclusion of coconut (technically a tree nut by FDA classification) means this bar contains a potential allergen. Still, like all of my dark chocolate, the milk chocolate remains gluten-free, non-dairy, and vegan-friendly.

Here's a surprising detail:
My 70% Dark Chocolate contains 30% unrefined sugar, while the new 42% Milk Chocolate contains slightly less—just 25%. The milk chocolate does taste sweeter, due to the lower cocoa content. It's a balanced, full-flavored chocolate that appeals to those who prefer a gentler cacao profile—without sacrificing depth.

I truly suspect you've never had a milk chocolate with flavor so robust.

Both chocolates have varietal cacao known for its depth. Both chocolates are roasted the same to develop the flavors. Both chocolates are stone-ground, allowing the nuanced character of the cacao to remain front and center—unlike conventional chocolate that is often over roasted, over-refined, and filled with unnecessary additives.

We hope this message finds you well and eager for the upcoming summer and fall seasons. We wanted to take a moment to inform you about some exciting updates and additions to our market schedule. Plus, we have a few surprises in store that you won't want to miss!

Firstly, we wanted to express our gratitude for your continued support. Your enthusiasm for our products and dedication to local artisans like us is truly inspiring. As a token of our appreciation, we extend an invitation for you to visit our markets in person. While we understand that not everyone can join us in person, for those who are able, we would be thrilled to have you there.

The primary purpose of this email is to share the dates for our summer and fall markets. Unlike last summer, where you could only find us at the Franklin Commons on Fridays, we are excited to announce the addition of the Norfolk market on Wednesday afternoons, starting June 7. This means you now have more opportunities to explore our delightful range of products throughout the week.

The Franklin Farmers' Market will begin on June 2, and we can't wait to showcase our latest creations and connect with you in person. Mark your calendars and join us for a fantastic day of local artisans, delicious treats, and vibrant community spirit.
